Es ist ein Ros entsprungen - is another of Northern Europe's most famous Christmas songs, originating from Germany ca 1500. The first version was printed in Köln in 1599 in the Speyerer Gesangbuch and had no less than 21 verses! Here's Paul Hillier's version with three verses
