Niels Stokholm is one of the most idealistic farmers in the farming country of Denmark. His whole outlook on life is about creating sustainability and about living in harmony and respect for nature on the biodynamic farm, Thorshøjgård, in North Zealand. Niels and his wife Rita produce raw materials for several of the best restaurants in Denmark, - here Denmark's leading chefs source the unique raw materials that help place Denmark visibly on the gastronomic world map. But their idealism and way of farming is a thorn in the side of the authorities. With regulations and ordinances in hand, they threaten Niels with depriving him of the right to have animals on the farm and this may cost him the possibility of farming at Thorshøjgård at all. For Niels, the farm and his animals are not something that is limited to his lifetime. He has visions for future generations and wants the land he leaves behind to be fertile for the enjoyment of people for the next thousand years.
